Spinach Artichoke Dip

A friend of ours brought this over for the Super Bowl party we had here... it is delicious!!! She got the recipe from Shondra at Cooks.com.

Spinach and Artichoke Dip

1 pkg. frozen spinach thawed1 jar marinated artichokes, chopped8 oz. Philly cream cheese8 oz. sour cream3/4 c. shredded Parmesan cheese8 oz. shredded Monterey Jack cheese1/2 onion finely chopped1 stick butterred pepper flakes to taste
~Sauté onions in butter, adding ingredients while mixing and blending well after each addition. Add ingredients in this order: Spinach, Cream Cheese, Sour Cream, Parmesan Cheese, Artichoke Hearts, Crushed Red Pepper Flakes.
~Remove from heat and put in crocks or microwave dish. Top with Monterey Jack Cheese and melt.
~Serve hot with chips or bread.
***May also add Mozzarella Cheese on top and lightly brown.

Ham Poppyseed sliders

I have made these twice now with wonderful compliments. A great addition to a party. :)

This recipe makes 24 mini sandwiches.

1 24 pack of the King's Hawaiian Sweet Rolls
1 lb of thinly sliced ham (or more or less, depending how much ham you like)
1 lb of thinly sliced Swiss cheese (again to preference)
2 Tablespoons yellow mustard
1/2 cup butter
2 Tablespoons Worcestershire sauce
mayonnaise
poppy seeds

First, slice your rolls through the middle into sandwiches. Spread mayo liberally on the inside of the bottom piece. Arrange your ham and Swiss on this. Spread mayo on the inside of your top piece and form the sandwich. Arrange in your 13x9.

After you have made your sandwiches, you will make your sauce. In a small saucepan, add the butter, mustard and Worcestershire sauce. Heat over medium heat until melted and whisk together.   Pour this over your prepared sandwiches. Then, sprinkle the poppy seeds over the top of the sandwiches. Cover with foil and bake at 350 for 20 minutes or until lightly browned and the cheese has melted. Enjoy!!

Layered Three Cheese Nachos

These are awesome!!! Allie made them for an appetizer when we finished studying Arizona and I have a feeling they will be getting made a lot around here:)

1 large bag of tortilla chips
2 cups shredded Monterrey Jack cheese
2 cups shredded cheddar cheese
2 cups shredded hot pepper jack cheese
1/2 cup chopped green onions
1 cup diced onions
1 cup of yellow canned corn (drained)
1/2 cup of diced jalapenos
1 cup black beans, drained and rinsed
1/2 cup chopped cilantro

Preheat the oven to 350 degrees F. Put half the corn chips on an ovenproof platter and sprinkle half of each cheese on them, followed by a portion of the remaining ingredients. Top with the remaining chips and toppings, ending with a layer of the remaining cheeses. Bake until the cheeses have melted. Serve with sour cream.

***We have some that are not crazy about beans, onions or jalapenos so we left one side without these ingredients for them... sort of like a make your own nachos:)
